Well my husband has decided to take the plunge and go back to truck driving after 5 years away. The only difference is we are now 250+ miles away from any support I may have and we have three young boys, instead of me living 20 miles from my family and only pregnant with our oldest. So it is going to be a huge change for all of u when he leaves in two days. This time we went all out though and upgraded to new phones with a mobile hotspot device, tablets and a new laptop for him so we can fully stay connected even while he is hundreds of miles away from us. I need to find activities for the kids and figure out how to do grocery shopping since I usually go alone or with him to help wrangle the kids! It is going to be hard but worth it when we can move where ever we want!
Finally back to cooking! I made Strip steaks, kale salad and corn for dinner tonight. So here is my marinade for my steak. Sorry I forgot to take pictures!
2 tbls A-1 Steak sauce (My family loves A-1 !!)
3 tbls olive oil
2 tbls lemon juice
1/4 cup soy sauce
1 clove garlic, minced
1/2 tbls basil
1/8 tsp salt
1/8 tsp pepper
Mix all ingredients together in a large ziploc bag and place steak inside. Marinade for 20 minutes to a few hours. Makes enough for two steaks. I pan-seared in butter and finished in the oven, but you can do it on the grill too.

Sorry for the hiatus yet again! My husband was in a motorcycle accident the end of May so it has caused quite few problems for our family. We are finally past it all and so thankful he wasn’t worse off and that he has had a full recovery. He still has to gain the strength back in his left arm but from breaking three fingers and destroying the ligaments in his shoulder (and having surgery to repair it) he is doing a lot better than anticipated from his doctors.
I haven’t been doing much cooking or experimenting lately either but I know I need to get back into it and start posting recipes again! I did make a really good dry rub for steak that I will post here soon. I am glad I wrote it down while I was experimenting to remember it.
Here is to a wonderful rest of summer and the fall that is rapidly approaching:)
